There’s something magical about the smell of apples and cinnamon baking on a crisp fall day — and this Gingersnap Apple Crisp takes that magic to the next level. The sweet-tart apples pair perfectly with a spiced, buttery gingersnap crumble that’s crunchy on top and melt-in-your-mouth underneath. It’s a comforting dessert that’s simple to make yet feels wonderfully special.

Whether you’re baking for a cozy family dinner, a Friendsgiving gathering, or just because it’s sweater weather, this apple crisp is the perfect way to celebrate the season.

Ingredients

For the apple filling:

  • 6 cups sliced, peeled apples (Granny Smith, Honeycrisp, or a mix)
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour (for thickening)

For the gingersnap topping:

  • 1 ½ cups crushed gingersnap cookies (about 20 cookies)
  • ¾ cup old-fashioned oats
  • ½ cup brown sugar
  • ½ cup all-purpose flour
  • ½ teaspoon ground ginger (optional for extra spice)
  • ½ cup cold butter, cut into small cubes

Directions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. Prepare the filling: In a large bowl, toss the sliced apples with both sugars, lemon juice, cinnamon, nutmeg, vanilla, and flour. Stir until evenly coated. Pour mixture into the prepared dish.
  3. Make the topping: In a separate bowl, combine crushed gingersnaps, oats, brown sugar, flour, and ginger. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Assemble: Evenly sprinkle the gingersnap topping over the apple mixture.
  5. Bake for 35–40 minutes, or until the apples are tender and the topping is golden brown.
  6. Cool slightly before serving — it’s best enjoyed warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.

Tips & Variations

  • Add chopped pecans or walnuts to the topping for a nutty crunch.
  • For an extra zing, stir in a teaspoon of fresh grated ginger with the apple filling.
  • Love a deeper spice flavor? Swap some cinnamon for allspice or cardamom.
