Italian Sausage and White Bean Stew

Easy and quick for any weeknight where you need something fast!

Ingredients:

1 19 oz. pkg. Italian Sausage, hot or mild
1 Tbsp. Extra Virgin Olive Oil
1 small yellow onion, diced
1 tsp. chopped garlic
2 cans (15.5 oz.) Great Northern Beans, drained and rinsed
1 can (14.5 oz.) Fire Roasted Diced Tomatoes
2 cups of chicken broth
1 tsp. dried oregano
1/2 tsp. thyme
1 tsp. salt
1/2 tsp. black pepper
2 cups frozen chopped spinach, thawed and drained
Fresh parsley to taste and garnish

Directions:

  1. Cook sausage in a large pot or Dutch oven over medium heat. Break up and brown until thoroughly cooked, approx. 6-8 mins. Remove from pan and set aside leaving remaining fat.
  2. Add the diced onion and cook until soft and translucent. Stir in garlic and cook until fragrant.
  3. Add beans, tomatoes, chicken broth, oregano, thyme and salt and pepper and stir well to combine.
  4. Bring mixture to a simmer and reduce heat to low. Let soup simmer for 20-25 mins until flavors meld together and soup has thickened.
  5. Stir in spinach and sausage. Cook for 5 more mins to heat through and remove from heat.
  6. Garnish with fresh parsley and enjoy!
