Cilantro Lime Chicken

Busy week ahead? Let your freezer do the work! This Cilantro Lime Chicken freezer meal is packed with fresh, zesty flavor and comes together easily. The result is juicy, flavorful chicken that’s perfect for tacos, rice bowls, salads, and more.

Ingredients:

3 large chicken breasts, boneless and skinless (Cubed if you would like, but can be whole)
2 Tbsp. olive oil
1 lime, juiced
1 1/2 cups cilantro, chopped (Can be adjusted for taste)
2 garlic cloves, minced
19 oz. can black beans, rinsed and drained
12 oz. can kernel corn, drained
1 purple onion, minced
1 tsp. chili powder 1/2 tsp. cumin powder
dash salt and pepper

Assembly instructions:

Place whole or cubed chicken into a large resealable freezer bag.
Combine olive oil, lime juice, cilantro, garlic cloves, drained black beans and corn, minced purple onions, chili powder and cumin. Add to the freezer bag.
Remove the excess air from the bag and seal. Freeze.

Cooking instructions:

  1. Take the freezer bag out of the freezer for a few hours to thaw.
  2. Dump bag contents into a slow cooker. Cook on high for 4-5 hours. If chicken was left whole, take out and shred or cube after 4 hours. Return to slow cooker and mix well with rest of ingredients.
  3. Serve over rice, flour tortillas or corn chips with salsa, sour cream, and guacamole. Enjoy!
